I love this quick and easy recipe that my mom always makes. It´s great in spring and summer as a light meal or an appetizer. Simply cook the green asparagus and prepare the vinaigrette. Take olive oil and a bit white vinegar, add salt and pepper and then mix in cut boiled egg, pickled cucumber and capers. Add some herbs and /or onion, pretty much anything that you prefer, such as chives, parsley, thyme, etc... Add the sauce over the cooked asparagus and voilà, an amazing and unusual meal. I would love to have some right now. Plus, asparagus is super healthy!
